I love a good Greek Salad! They are so tangy and loaded with a variety of contrasting yet complementary flavors! Greek salads are more commonly paired with grilled chicken or beef kebobs, but I thought a flavorful Greek salad would be a great partner to turkey burgers! Add some Tzatziki and you have a delicious meal!
Unlike hamburgers, turkey burgers really need some assistance to be flavorful and not dry. Approach your turkey burgers like you would approach a meatball or meatloaf – you have to add liquid in some form to avoid a dry burger. For this recipe, I choose to moisten the meat with a little bit of the Greek salad dressing that I made (see below), and chicken broth. Choosing from the amazing ingredients found throughout the Mediterranean, I blended the ground turkey with green and black olives, spinach, roasted red peppers, and feta cheese. Fennel seed and oregano really added intensity to the flavor as well.
Finish this dish off with a creamy Tzatziki and you will have one flavor-packed dish!
Turkey Burgers with Greek Salad and Tzatziki
Ingredients
- 1 lb Ground Turkey
- 2 Tbs Diced Green and Black Olives
- 1 Tbs Diced Roasted Red Pepper
- Handful Chopped Spinach
- 1 Tbs Greek Salad Dressing Could increase to 2 Tbs
- 2 Tbs Chicken Broth
- 1/4 Cup Crumbled Feta Cheese
- 1/2 tsp Oregano Increase for more flavor
- 1/2 tsp Fennel Seed Increase for more flavor
- 1/4 tsp Garlic Powder
- 1 tsp Salt
- 1/2 tsp Ground Black Pepper
- 1-2 Tbs Olive Oil
Instructions
- Add all ingredients to a mixing bowl
- Either by hand or with a heavy-duty mixer, mix the ingredients until completely blended.
- Form the mixture into 4 burgers
- Heat a medium-sized skillet on medium-high heat, add olive oil
- Sear the burgers 3-4 minutes per side until nicely browned
- Cover and turn the heat down to a simmer until burgers reach an internal temperature of 165'
- Serve with a Greek Salad and Tzatziki!
Greek Salad in a Tangy Greek Dressing
Ingredients
- 15 oz Butter Lettuce or crunchy lettuce of choice
- 1/4 Cup Green and Black Greek Olives
- 1 Cucumber Some sliced and some diced
- Tomatoes I used "Sugar Bombs" a sweet grape tomato, but you can use any type
- 1/2 Cup Sweet Banana Peppers
- Crumbled Feta Cheese
Instructions
- Mix all ingredients in a large salad bowl except the sliced cucumbers
- Add Greek Salad Dressing (see recipe) and toss until evenly coated
- Serve with Pita Bread (I used Gluten-Free) and Tzatziki. Garnish with sliced cucumbers
Tangy Greek Salad Dressing
Ingredients
- 2/3 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- 1/2 Lemon Juiced
- 1 Clove Garlic, Minced
- 3/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- 1/2 tsp Oregano
- 1/4 tsp Fennel Seed
Instructions
- Add all ingredients to a container. I used a tall 2 cup measuring cup
- Whisk ingredients until well blended
- Serve on a Greek Salad (see recipe)
Tzatziki
Ingredients
- 14 oz Plain Full Fat Greek Yogurt
- 1/2 Large Cucumber
- 1 Clove Garlic
- 1/2 Lemon Juiced
- 1 Tbs Olive Oil
- 1 Tbs Fresh Dill, Diced
- Salt to Taste
Instructions
- Place yogurt in a mixing bowl
- Grate cucumber
- Mince the garlic, or run it over a lemon zester
- Add remaining ingredients and mix well
- Serve with Greek salad, Turkey Burger, Kebobs, and Pita
Monique- I find it hard to find the words to describe how delicious this turkey ensemble is. I never thought turkey burger could be so moist and tasty. The salad and dressing also was a home run. Everything complimented each other. Truly a 5 star dinner. Even better, Terri and I have enough for tomorrow evening.
